What age setting do you have for your Sims? Like I tend to have it at medium but then I feel the characters stagnate too much…

That depends on what I’m playing! In general, I tend to have my lifespan to set to normal. With my 100 Berry Babies I am following the original challenge rules. So either they age up on their, get an A in school, or level 3 on all skills for toddlers. Which is why it probably seems like it goes faster? They almost never age up on their own.
